- 1 cup raw pumpkin seeds (hulled, soaked overnight)
- 6 cups filtered water
- 1 teaspoon matcha powder (optional)
- 4 pitted dates or 1 tablespoon raw honey
- 2 tablespoons coconut butter or almond butter
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon sea salt
Instructions
- Drain the soaked pumpkin seeds.
- Add seeds, water, and all ingredients to a blender.
- Blend on high for 60 seconds until smooth and creamy.
- Strain through a nut milk bag (optional) for smoother texture.
- Pour into a glass jar and refrigerate for up to 4 days.
- Shake well before serving each time.
